Thank you Bobkelso! I was finally able to find where the probe for the gauge on the dashboard is located! It's screwed on the left intake manifold, hidden under the airbox.

Yes, you are right, the cubic sensor is just an engine high temperature switch wired to the red light on the dashboard.
No connection at all with the coolant temperature gauge.
